Cheese Pav Bhaji Fondue

INGREDIENTS

  • 2 tablespoons Butter.
  • 1 medium Onion, finely chopped.
  • 1 medium Tomato, finely chopped.
  • 1/2 cup boiled and mashed Potatoes.
  • 1/2 cup mixed Vegetables (Peas, Carrots, Beans, etc.), boiled and mashed.
  • 2 tablespoons Amima’s Kitchen Pav Bhaji Spice Mix.
  • 1/2 cup Water (adjust for desired consistency).
  • 1 cup Grated Cheese (cheddar or a mix of mozzarella and cheddar).
  • 2 tablespoons Fresh Coriander, chopped (for garnish).
  • 6 Pav (Bread Rolls), sliced in half.
  • 2 tablespoons Butter (for toasting the pav).

INSTRUCTIONS

  1. In a pan, heat 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until they turn soft and golden.
  2. Add the chopped tomatoes and cook for a few minutes until they soften.
  3. Stir in the Amima's Kitchen Pav Bhaji Spice Mix and cook for 1-2 minutes to bring out the flavors.
  4. Add the mashed potatoes and boiled vegetables to the pan. Stir well to combine everything.
  5. Pour in the water. Mix thoroughly and let it cook for 5-6 minutes, stirring occasionally. The consistency should be thick but smooth.
  6. Once the mixture is well cooked, reduce the heat and add the grated cheese. Stir until the cheese melts completely and the mixture becomes creamy.
  7. Adjust the seasoning by adding salt or more pav bhaji spice mix if necessary.
  8. For the pav, heat 2 tablespoons of butter in a separate pan and toast the pav halves until golden and crispy.
  9. Serve the cheesy pav bhaji fondue in a fondue pot or a bowl. Garnish with fresh coriander and serve with the toasted pav on the side for dipping.
