INGREDIENTS
- 2 tablespoons Butter.
- 1 medium Onion, finely chopped.
- 1 medium Tomato, finely chopped.
- 1/2 cup boiled and mashed Potatoes.
- 1/2 cup mixed Vegetables (Peas, Carrots, Beans, etc.), boiled and mashed.
- 2 tablespoons Amima’s Kitchen Pav Bhaji Spice Mix.
- 1/2 cup Water (adjust for desired consistency).
- 1 cup Grated Cheese (cheddar or a mix of mozzarella and cheddar).
- 2 tablespoons Fresh Coriander, chopped (for garnish).
- 6 Pav (Bread Rolls), sliced in half.
- 2 tablespoons Butter (for toasting the pav).
INSTRUCTIONS
- In a pan, heat 2 tablespoons of butter over medium heat. Add the chopped onions and sauté until they turn soft and golden.
- Add the chopped tomatoes and cook for a few minutes until they soften.
- Stir in the Amima's Kitchen Pav Bhaji Spice Mix and cook for 1-2 minutes to bring out the flavors.
- Add the mashed potatoes and boiled vegetables to the pan. Stir well to combine everything.
- Pour in the water. Mix thoroughly and let it cook for 5-6 minutes, stirring occasionally. The consistency should be thick but smooth.
- Once the mixture is well cooked, reduce the heat and add the grated cheese. Stir until the cheese melts completely and the mixture becomes creamy.
- Adjust the seasoning by adding salt or more pav bhaji spice mix if necessary.
- For the pav, heat 2 tablespoons of butter in a separate pan and toast the pav halves until golden and crispy.
- Serve the cheesy pav bhaji fondue in a fondue pot or a bowl. Garnish with fresh coriander and serve with the toasted pav on the side for dipping.
